RICE VEGETABLE SALAD 
3 c. cooked, cooled rice
1 med. or 2 sm. tomatoes, cubed
1/2 c. each chopped celery & parsley
1/2 c. chopped onion
1/2 c. grated carrots
1 crushed garlic clove
1/8 tsp. pepper
1/4 c. chopped green pepper
3/4 c. mayonnaise
3 tbsp. lemon juice
1 tbsp. sugar
1/2 tsp. salt

Thoroughly blend mayonnaise, lemon juice, sugar and salt. Stir into vegetables and rice. Serve chilled over lettuce leaf.
