GEOF'S SHANGHAI FRIED CHICKEN 
2 boneless chicken breasts
1 egg (beaten)
Bread crumbs
Sesame seeds
Vegetable oil
1 tsp. ginger
1 tsp. lemon rind (optional)
3 tsp. soy sauce
1 tbsp. brown sugar
1 sm. can pineapple

Slice chicken to 1/2 inch thickness.

Mix bread crumbs (about 1/2 cup) and sesame seeds (about 1 tablespoon) together.

Dip chicken in beaten egg and roll in bread crumbs and sesame seeds to coat it. Fry the chicken in a heavy skillet.

Mix the ginger, lemon rind, soy sauce, brown sugar and the juice from the pineapple together. Warm over a low heat. Pour the sauce over the chicken on a bed of rice. Garnish with pineapple.
