CRISPY CHEESE FRIES 
2 c. butter flavor Crisco shortening
1 (20 oz.) pkg. Idaho crinkle cut French fried potatoes
1/3 c. grated Parmesan cheese
1 tsp. paprika
1 tsp. garlic salt
1/4 to 1/2 tsp. red pepper

Heat shortening to 375 degrees in a 10 inch cast iron skillet (shortening will be about 1/2 inch deep). Add a single layer of potatoes to shortening. Fry, turning frequently, until desired crispness (about 5 minutes). Drain on paper towels. Repeat with remaining frozen potatoes. Combine remaining ingredients and toss with potatoes while hot. Serve immediately. Yield: 4 to 6 servings.
