THE COUNTRY INN'S LEMON BREAD 
1/3 c. butter
1 c. sugar
2 eggs
Rind of 1 lemon, grated
1/2 c. milk
1/4 tsp. almond extract
1 1/2 c. flour
1 tsp. baking powder

GLAZE:

Juice of 1 lemon
1/2 c. sugar

Preheat oven to 350 degrees. Grease one loaf pan.

Cream butter and sugar until light. Add eggs and beat until well combined. Mix milk, grated rind and almond extract together in measuring cup. Mix flour and baking powder together in small bowl. Add dry ingredients and milk mixture alternately to creamed mixture. Beat until well mixed. Bake for 1 hour or until a cake tester, when inserted in center, comes out clean.
