PEACH - GLAZED CARROTS 
1 lb. carrots, scraped & sliced
Water
1/3 c. peach preserves
1 tbsp. butter, melted

Combine carrots, 2 tablespoons water, peach preserves, and butter in a 1 quart casserole. Cover and microwave at high 7 to 8 minutes or until crisp-tender, stirring once. Serve with slotted spoon.

Since microwave ovens vary in power, you may need to adjust your cooking time.
