SWEET POTATOES WITH DARK RUM 
2 (1 lb.) cans sweet potatoes
1 can mandarin oranges
2 apples, peeled and diced
1 can of water chestnuts, sliced
3 tbsp butter
1/3 c. sugar
2 oz. dark rum
2 tsp. cinnamon
2 tsp. ginger

Drain the oranges, reserving the juice. Mash the potatoes. Mix the potatoes, oranges, apples and water chestnuts together. Combine the reserved mandarin orange juice with the remaining ingredients and heat in a small saucepan, stirring until sugar dissolves.

Put the potato orange mixture into a buttered casserole and pour the sauce over all. Bake for 45 minutes in a 350 degree oven.
