SWEET POTATOES WITH RUM 
2 lb. sweet potatoes
4 tbsp. butter
1/2 tsp. nutmeg
1/2 c. rum
1/2 c. pecans
2-3 tbsp. brown sugar, juice & grated rind of an orange

Mash 2 tablespoons butter with orange juice and rind. Add nutmeg and sweet potatoes. Grease shallow baking dish with remaining butter. Spread with mixture. Make holes with fingers. Fill holes with rum. Cover with pecan halves. Sprinkle with brown sugar. Bake at 350 degrees about 30 minutes.
