SWEET POTATO RUM CASSEROLE | |
3 sweet potatoes, peel, cooked and mashed 1/4 c. plus 2 tbsp. butter, melted 1/2 c. flaked coconut 1/2 c. chopped pecans 1/4 c. dark rum 1 1/2 tsp. vanilla 6 marshmallows Raisins (optional) Combine first seven ingredients, mixing well. Spoon into lightly greased 1 1/2 quart casserole dish. Bake uncovered at 325 degrees for 45 minutes. Arrange marshmallows on top. Bake until marshmallows are lightly browned. |
