MOMA'S FAMOUS HOMEMADE MINI PEANUT BUTTER CUPS | |
2 cups (12 oz.) semisweet chocolate chips 1 cup (6 oz.) milk chocolate chips 1 1/2 cups confectioners' sugar 1 cup peanut butter (crunchy or smooth) 1/2 cup vanilla wafer crumbs (about 11 normal size wafers) 6 tbsp. butter, softened mini cupcake papers (or foil) Line your mini cupcake papers with double-thickness; set aside. Melt both chips in a small saucepan over low heat, constantly stirring until completely melted. Take a spoonful of chocolate and pour inside the cups. Make sure to use backside of spoon to spread chocolate on all sides of paper. Put in refrigerator. In medium bowl take wafers and smash them up into crumbs. Make sure there are no chunks of cookie. Combine sugar, peanut butter, and butter into the crumbs. Mix WITH A SPOON (not a hand mixer) until everything is combined. Spoon a little bit of peanut butter mixture into each cup. (Make sure the chocolate is hard before you add the peanut butter mixture). Also make sure there is room to put the top layer of chocolate. Re-melt the chocolate from before and spoon a little bit on the top so you cant see the peanut butter mixture. Put in refrigerator until hardened. Then BON APPETITE! Submitted by: Moma |
