COUNTRY EGGS 
1/4 c. finely chopped onion
1/4 c. finely chopped green pepper
1 tbsp. butter, melted
6 eggs
1/4 c. milk
1/4 tsp. salt
1/4 tsp. pepper
1/2 c. (2 oz.) shredded Cheddar cheese

Saute onion and green pepper in butter in a large skillet until tender. Combine eggs, milk, salt and pepper; mix well. Pour egg mixture into hot skillet and cook slowly, stirring frequently. Remove from heat. Sprinkle with cheese; cover and let stand about 1 minute before serving. Yield: 4 servings.
