EGG FRIED RICE 
4 tbsp. vegetable oil
4 lg. eggs, beaten
1 med. onion, chopped
4 c. cold cooked rice
1 c. frozen green peas, thawed slightly
2 tbsp. soy sauce

In large skillet, heat 2 tablespoons oil over medium heat. Add beaten eggs, cook until set; stirring with pancake turner. Remove eggs to a plate and set aside. Add 2 tablespoons oil to skillet, heat and add onion. Cook until tender. Stir in rice and peas, cook until rice is heated through. Stir in soy sauce and cooked eggs. Serves 4.

Tastes great. I used sesame oil and brown rice. My son likes it without soy sauce, so I bring that to the table.
