HAM AND EGGS AND FRIED RICE 
1 pkg. defrosted frozen peas
2 eggs, lightly beaten
1 slice ham, 1/2 inch thick (cubed and boiled)
3 c. cooked rice (1 1/3 c. uncooked)
4 to 6 green onions (finely chopped)
3 tbsp. vegetable oil
1 tsp. salt

1. Have everything ready and handy.

2. Set skillet over high heat 20 seconds. Put in 1 tablespoon oil. Swirl and lower heat to medium.

3. Pour in beaten eggs, when film forms remove moist scrambled eggs.

4. Pour 2 tablespoons of oil in pan. Heat 30 seconds.

5. Add salt, then peas and ham. Stir 20 seconds. Return eggs. Add green onions and cook long enough to heat eggs through. Serves 4. Quick meal.
