GOURMET BEEF SKILLET 
2 lbs. sirloin tip, cut into 2 x 1/4 inch strips
2 tbsp. butter
1/2 c. dry Madeira wine
1 c. plain low or no-fat yogurt
3 tbsp. flour
1 tsp. paprika
1/2 tsp. salt
2 c. sliced mushrooms (about 6 oz.)
1 green pepper, cut into julienne strips
Cherry tomatoes

Brown beef in melted butter in a large skillet. Add wine. Cover and simmer 20 to 25 minutes until tender. Blend together yogurt, flour, paprika, and salt. Add to beef and cook, stirring constantly, until thickened. Stir in mushrooms and green pepper. Cover and simmer 5 to 10 minutes until vegetables soften. Add cherry tomatoes and simmer until tomatoes soften. Serve over buttered noodles.

Note: If more liquid is desired, add more wine before vegetables are added.
