EGGPLANT CASSEROLE 
1 lg. eggplant
1/2 lb. sausage
1 onion, chopped
1/2 c. bell pepper
1 egg, well beaten
1/2 c. dry bread crumbs
1/4 c. (or more) cracker crumbs
1 tbsp. or more butter
1/2 c. cheese

Peel, cut up and cook eggplant until tender. Drain and mash eggplant. Set aside to cool. Cook sausage, onion and pepper until brown. Add cheese and egg to eggplant. Combine all ingredients and bake at 350 degrees for about 25-30 minutes.
