EGGPLANT PIZZAS 
1 (8 oz.) eggplant, cut into 8 slices (lg. diameter works better than a long, thin eggplant)
2 tbsp. bread crumbs
1/2 c. bottled spaghetti sauce
4 oz. skim milk Mozzarella cheese, grated
1 (1 oz.) pork sausage link, cooked & crumbled

Place eggplant slices in a shallow dish, cover with boiling water and let stand 5 minutes. Drain and coat with bread crumbs. Place on a baking sheet in a single layer. Broil 4 to 5 inches from heat source 3 to 4 minutes on each side, or until golden and tender. Spread 1 tablespoon sauce on each slice. Sprinkle with cheese and cooked sausage. Broil 1 to 2 minutes longer, until cheese is melted. Makes 2 diet servings. 286 calories per serving.
