1 diced eggplant
4 green peppers
1 lg. onion
2 cloves garlic
2 lbs. sweet Italian sausage, cut up
1 lg. can tomato sauce
Basil and salt to taste

Cover skillet with olive oil. Brown chopped onion and garlic in hot olive oil. Remove garlic and add diced eggplant and cook for 20 minutes. Add green peppers to eggplant. Cook about 30 minutes then add can of tomato sauce, basil and salt. Cook sausage and discard grease. Add sausage to mixture and cook for 2 hours.
