PASSOVER MANDELBREAD 
2 c. sugar
1/4 c. butter
6 lg. eggs
2 1/4 c. matzo cake meal
3/4 c. potato starch
1/2 tsp. salt
1 c. nuts
1 c. raisins
1 tsp. cinnamon
2 tsp. sugar

Cream sugar and butter. Add eggs, 1 at a time. Sift cake meal, starch and salt together. Add cake meal mixture to egg mixture. Beat by hand until thick. Fold in nuts and raisins. On greased cookie sheet, shape dough into loaves 2 inches wide. Combine cinnamon and sugar and sprinkle on top. Bake at 350 degrees for 45 minutes. Slice while warm and then cool. This recipe makes 48 slices.
