PASSOVER MATZO CHARLOTTE 
2 matzos, soaked (squeeze out water)
2 eggs, beaten
4 tbsp. sour cream
2 tbsp. sugar
1/2 c. raisins
2 apples, grated (lg. size)
1/2 lemon, juice & rind
1 lb. pot cheese

Melt 1/4 cup butter in 6 x 9 1/2 inch oblong pan. Mix all ingredients together. Put everything into the pan and sprinkle cinnamon on top. Bake in a 350 degree oven for 1 hour.
