CAKE MIX WHOOPIE PIES 
1 lg. box chocolate cake mix
1/3 c. water
3 tbsp. oil
2 eggs

Mix together and drop by teaspoon (spread out) onto greased cookie sheets. Bake about 8 to 10 minutes at 350 degrees. Cool on rack.

FILLING:

1 c. shortening
1 c. confectioners' sugar
1 c. marshmallows
1/2 tsp. vanilla

Beat together well.

Awesome recipe and super quick!! My friends all loved these. Even when I baked the little cookies for too long, it was fine because they soften after awhile because of the filling. For the filling I used the ultimate shortcut. I mixed marshmallow fluff with frosting from a canister and added a few drops of almond extract as well as vanilla extract. I did it to taste but used more marshmallow fluff than frosting. Came out really, really great!

My kids love this recipe. I use Mint Chocolate Ice Cream for the filling. Wrap each one up in foil and put in the freezer for a cool treat.

Super easy and quick. Microwaving the marshmallows is crucial. I found it really easy to manage their stickiness by lightly greasing the bowl prior to microwaving them as well as the spatula I used to incorporate them into the shortening/sugar mixture.

Instead of using the shortening for the filling, I substituted it for cream cheese. It still comes out great, but it gives this Whoopie pie classic a little zest!

Awesome recipe. But make sure you drop by the tsp! They get really big. I chose to drop with a big spoon and put 8 on the pan. They filled up the WHOLE cookie pan! Silly me.

I used this recipe but instead of chocolate cake mix I used red velvet..and instead of the marshmallow filling I used cream cheese icing..turned out great!
