VIDALIA ONION PIE 
1/3 stick butter
24 saltine crackers, crushed
1 lb. Vidalia onions, sliced thin

Melt butter and pour half into crushed crumbs. Blend well and press into pie plate. Saute onions in remaining butter until tender, not brown. Put onions on pie crust. Make white sauce and add to it 1/4 pound sharp cheese. Pour white sauce mixture over onions. Sprinkle with a few cracker crumbs and grated cheese. Bake 15-20 minutes at 350 degrees.

WHITE SAUCE:

1 tbsp. flour
1 c. milk
2 tbsp. butter
1/4 tsp. salt
1/4 tsp. pepper

Bring to a boil, stirring constantly.
