PINEAPPLE CHEESE SALAD 
2 pkg. lemon or lime Jello (can be sugar free)
2 c. boiling water
2 c. cold water
6 sliced bananas
2 c. sm. marshmallows, cut in half
1/2 c. sugar
2 (8 1/2 oz.) can crushed pineapple (not drained)
3 tbsp. cornstarch
1 c. heavy cream whipped or use Cool Whip
1 c. shredded longhorn cheese

Dissolve Jello in boiling water, add cold water and chill until syrupy. Stir in sliced bananas and marshmallows. Pour in 9 x 13 x 2 inch pan. Mix sugar and cornstarch, add to pineapple, cook over low heat, stirring constantly until thickened. Cool. Whip heavy cream and fold in pineapple mixture. Add 1/2 of the cheese. Spread mixture on Jello. Sprinkle with the remaining cheese. Chill. Serves 12-15.

You may omit the marshmallows. It's quite sweet with marshmallows and if omitted the salad is not so sweet.
