BANANA NUT BREAD 
1/2 c. shortening
1 c. sugar
2 c. sifted flour
1/2 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
3 eggs
3 lg. or 5 sm. ripe bananas, mashed
1/2 c. chopped pecans (if desired)

Preheat oven 350 degrees.

Cream together shortening and sugar. Add 1 tablespoon flour. Beat eggs one at a time. Add more flour and banana pulp alternately, reserving 1/2 cup of flour. With this, sift the salt, soda and baking powder. Add this to the batter. A Add nuts.

Pour batter into a well greased bread loaf pan, pulling dough to ends and sides of pan to make a well shaped loaf. Bake for one hour.
