1 c. oil
2 c. sugar
2 eggs, slightly beaten
2 1/2 c. flour
1 tsp. salt
2 tsp. vanilla
3 c. chopped apple
1 c. nuts (optional) about 1/4 of this could be on top of topping
1 tsp. baking soda

Bake at 350 degrees for 40-50 minutes.

TOPPING;
1 med. size Cool Whip
1 pkg. instant vanilla pudding
15 oz. can crushed pineapple, drained
