ZUCCHINI BARS 
2 c. sugar
2 c. grated raw zucchini
2 c. flour
1 tsp. baking powder
1 tsp. cinnamon
1 c. raisins (opt.)
4 eggs
1 c. salad oil
1 tsp. baking soda
1/4 tsp. salt
1 tsp. vanilla
1 c. chopped nuts (opt.)

Mix together sugar, eggs, zucchini and oil. Add dry ingredients and vanilla; add raisins and nuts. Pour into greased large jelly roll pan and bake 40 to 45 minutes at 350 degrees. Cool and frost with Cream Cheese Icing.

CREAM CHEESE ICING:

1/2 c. butter
1 (8 oz.) pkg. cream cheese
1 tsp. vanilla
1 lb. powdered sugar
