NUEVO MEXICAN BANANA GOLD | |
3 lg. or 4 sm. (med. ripe) bananas 2 tbsp. butter 1/4 c. light brown sugar 1 pt. vanilla ice cream, slightly softened 2 oz. rum (opt.) 1. Peel bananas (large bananas should be split lengthwise). 2. Melt butter in large skillet over low heat. Add sugar and stir until melted. 3. Add bananas and saute just until tender, turning once about 10 minutes. 4. In bowl, blend softened ice cream and rum. 5. Remove bananas to serving dish and spoon brown sugar glaze over them. 6. Serve with ice cream sauce (blended ice cream and rum). Makes 4 to 6 servings. |
