VEAL PARMESAN 
4 pieces veal, 1/2 inch thick
2/3 c. evaporated milk
2 tbsp. grated Parmesan cheese
1/4 c. flour
1/2 tsp. salt
Dash of pepper
1/2 c. grated Parmesan cheese
8 oz. can tomato sauce
2 tbsp. butter

Melt 2 tablespoons butter in 8x12 inch pan. Dip veal in 1/3 cup evaporated milk. Roll in flour mixture (flour, 2 tablespoons Parmesan cheese, salt, pepper) and put in pan. Bake uncovered at 350 degrees for 30 minutes. Take from oven, pour tomato sauce over veal.

Mix 1/3 cup evaporated milk and 1/2 cup grated Parmesan cheese. Spoon over top. Bake an additional 20 to 25 minutes. Serves 4.
