VEAL PARMESAN | |
4 breaded veal cutlets or 4 breaded veal patties 2 tbsp. butter Crisco 4 slices of mozzarella or soft provolone cheese 1/2 c. parmesan cheese 1 (16 oz.) can tomato puree or your own sauce 1 med. thinly sliced onion Melt Crisco in 9 x 13 inch glass baking dish in oven set at 350 degrees. Remove from oven and place breaded veal in the melted butter. Return to oven and brown, turning to brown other side. Remove from oven. Drain veal on paper towel and rise baking dish of accumulated fat. Return meat to dish, spread sliced onions on meat. Add sauce only to top center of meat. Sprinkle parmesan cheese on top. Do not drench it in sauce. Bake for 45 minutes or until hot. Turn off oven. Layer sliced cheese on top and leave in oven to melt and ready to serve. Do not melt cheese. Serve with a side of pasta, or fresh Italian bread. |
