ZUCCHINI AND SAUSAGE TIAN 
1 1/2 c. cooked converted type rice
1/4 lb. hot Italian sausage, casing removed and crumbled
1 lb. zucchini, unpeeled and coarsely grated
1/2 c. minced parsley
1/3 c. freshly grated Parmesan cheese
1 lg. clove garlic, minced
2 tbsp. olive oil
2 lg. eggs, slightly beaten

Thoroughly stir together the rice, raw sausage, zucchini, parsley, cheese, garlic, oil and eggs. Turn into an oiled 8 x 8 x 2 inch baking dish; sprinkle with the topping. Bake in a preheated 350 degree oven until browned, about 40 minutes. Serve hot. makes 4 to 6 servings.

TOPPING:

1/2 c. fresh fine bread crumbs
2 tbsp. freshly grated Parmesan cheese
1 tbsp. olive oil

Stir topping ingredients together.
