AWESOME EASY CHICKEN AND
BROCCOLI CASSEROLE
 
This is my mother-in-law's recipe and it is delicious!!! This is a great way to use your leftover chicken or turkey.

2 cups cooked chicken (or turkey), chopped
1 (23 oz.) cream of chicken soup (family size)
1 cup mayonnaise
1/4 tsp. curry powder
1 (1 lb.) pkg. frozen broccoli spears, slightly thawed
2 cups grated cheddar cheese
5 slices toasted bread
1/2 cup (1 stick) melted butter

Preheat oven to 350°F.

In a large 9x13-inch casserole dish, mix soup with mayonnaise and curry powder. Stir in cooked, diced chicken. Arrange broccoli spears over the soup and chicken mixture. Spread grated cheese over all. Crumble toasted bread and spread over the top of casserole. Drizzle melted butter over bread crumbs.

Bake in a 350°F oven until hot and bubbly, about 35 minutes.

Note: Be careful to use only 1/4 teaspoon of curry powder --no more, no less!
