DAY AHEAD CASSEROLE 
8 oz. pkg. noodles
3 oz. cream cheese, softened
1 c. sour cream
6 med. scallions
1 clove garlic
1 lb. ground beef
15 oz. tomato sauce with bits of green pepper
1 tsp. salt
Pepper
1 c. grated Cheddar cheese

Cook the noodles as directed on package. Drain, rinse with hot water, drain again. Beat the sour cream into the cream cheese. Stir in onion and garlic. Brown the beef, then stir in tomato, salt and pepper.

In a 2-quart baking dish, layer half the noodles, half the sour cream and cream cheese, half the beef sauce; repeat. Sprinkle with grated cheese. Cover tightly and refrigerate for 24 hours. Bake in a preheated 350 degree oven for 30-40 minutes. Let stand for 10 minutes before cutting. Serves 6.
