DAY-AHEAD VEGETABLE CASSEROLE 
8 slices white bread, cubed
1 c. chopped celery
1 c. sliced mushrooms
1 c. chopped zucchini
1 green bell pepper, chopped
3/4 c. mayonnaise
4 eggs
1 c. milk
1 can mushroom soup
Grated Cheddar cheese to taste

Place half the bread cubes in a buttered casserole. Mix vegetables with mayonnaise and arrange over bread cubes. Add rest of bread. Beat eggs with milk and pour over vegetables and bread. Refrigerate overnight. Pour mushroom soup over the top, sprinkle grated cheese, and bake at 350 degrees for 45 minutes. Serves 8.
