LAYERED LEMON PIE 
20 chocolate wafers
1/4 c. butter

Substitute Oreo's for wafers if you can not find wafers.

Crumble chocolate wafers or pulverize in blender. Mix with melted butter and pat into pie shell. Bake 8 minutes at 350 degrees.

FILLING:

1/4 c. butter
1/3 c. lemon juice
3/4 c. sugar
Dash of salt
3 slightly beaten eggs
1 pt. vanilla ice cream

Melt butter, stir in lemon juice, sugar, dash of salt. Stir to dissolve. Pour 1/2 into 3 slightly beaten eggs. Return eggs to rest of butter mixture and cook over medium heat (I cook in double boiler). Chill. Divide 1 pint vanilla ice cream in half. Put half into cookie crust, pour half lemon mixture over.

Freeze. Repeat layers. Freeze. Garnish with cookie crumbs or chocolate curls. Let stand 10 minutes at room temperature before serving. Serves 8.
