ARTICHOKE QUICHE 
6 eggs, beaten
1 deep dish pie crust
2 jars artichoke hearts
1/2 onion, chopped
1 1/2 c. Cheddar cheese, grated
1/2 tsp. oregano
Dash of Tabasco
1/2 c. bread crumbs
3/4 c. heavy cream
1/4 c. parsley

Preheat oven to 400 degrees. Brush crust with egg and bake until lightly browned. Drain oil of 1 jar of artichokes into a skillet. Drain the other jar and dispose. Chop artichokes. Heat artichoke oil. Saute onion until soft. Add artichokes, remove from heat.

Put artichoke mixture in mixing bowl. Add cheese, oregano, Tabasco, bread crumbs, parsley. Beat egg and cream together. Add to artichoke mixture. Put in pie shell. Lower oven to 325 degrees. Bake pie 35 minutes or until eggs are set.
