ASPARAGUS RING 
1/4 c. olive or vegetable oil
4 tsp. wine vinegar
2 tsp. chopped basil
1 tsp. salt
1/2 tsp. pepper
3 lbs. cooked asparagus
1 lb. cream style cottage cheese
2 tbsp. chopped chives
1 tsp. salt
Pimento strips

Combine oil, vinegar, basil, salt and pepper. Pour over asparagus. marinate about 2 hours.

Combine cottage cheese, chives, salt. Arrange asparagus spoke-style around large serving platter. Spoon cheese mixture into center. Outline cheese mixture with pimento strips. Serves 12.
