PEACH OR APPLE CAKE 
1 1/2 c. sugar
2 c. flour
2 tbsp. shortening (Crisco)
1/2 tsp. salt
2 tsp. baking powder
2 eggs
4 tbsp. hot water
1 tsp. vanilla
Cinnamon, sugar and nutmeg for topping

Cream sugar, shortening, eggs, hot water, and vanilla. Add flour (a little at a time). Batter will be thick. Grease and flour pan.

Spread batter in a long jelly-roll pan or cookie sheet. Make a thin layer. Several round cake pans will do. Just remember to put a thin layer of batter in each pan.

Slice peaches/apples and cover cake completely. Mix white sugar, cinnamon and nutmeg together. Sprinkle on top of cake. Dot with butter. Bake at 350 degrees for about 25 minutes. Watch closely.
