KELLY'S UNSTUFFED CABBAGE CASSEROLE | |
1 head of green cabbage 2 lb. ground beef 2 rings kielbasa 2 cups uncooked rice (Minute Rice is best) 2 (10 oz. ea.) cans tomato soup 1 (10 oz.) can Rotel diced tomatoes with liquid 1 tsp. garlic powder 1 finely diced onion (can substitute with 2 tbsp. dried onion) 1 tbsp. dried parsley, or fresh 1/2 tsp. cayenne pepper rye bread with seeds (optional) Brown meat in large pan or Dutch oven. While meat is browning, slice cabbage into 1/2-inch strips. Cover bottom of large deep baking dish with cabbage. Pour uncooked rice over cabbage. Add onions and seasonings to meat. Slice kielbasa. fit what you can. You might have about a 1/4 of a ring remaining. Add kielbasa to meat stir and cook on medium high for 3 minutes. Next add soup, and diced tomatoes with its juices. Stir. Remove from heat. Pour mixture all over cabbage. Place in oven at 375°F. Cook for 1 hour and 30 minutes. Stir; Continue cooking until cabbage is soft, liquid has been absorbed and rice is cooked. Serve with rye bread and butter. Submitted by: Kelly Zieman |
