REFRIGERATOR DESSERT 
60 vanilla wafers (package)

Process wafers into crumbs and divide into 3 parts.

First Layer:

1/2 cup (1 stick) butter
1 cup powdered sugar
3 eggs, separated
1 teaspoon Rum Extract
1 cup chopped nut meats

Cream butter and sugar. Add well-beaten egg yolks, rum extract and nuts. Beat egg whites stiff and add.

In a buttered 9x9x2-inch pan place 1/3 of wafer crumbs. Pour in First Layer mixture. Top with 1/3 crumbs.

Second Layer:

1/2 cup cocoa
1/4 cup boiling water
1 cup powdered sugar
3 eggs, separated
1 teaspoon Vanilla Extract

Mix cocoa and water. Add sugar, vanilla and beaten egg yolks. Fold in stiffly beaten egg whites. Pour Second Layer mixture in pan. Top with remaining 1/3 crumbs. Chill 24-48 hours.

Serve with whipped cream. Garnish with cherries.

Makes 8 servings.
