IRISH SODA BREAD | |
4 c. flour 2 tbsp. soft butter 2 tbsp. sugar 1 tsp. baking soda 1 1/2 tsp. baking powder 2 c. buttermilk 1 tsp. salt 1 c. raisins 3-4 tbsp. caraway seeds (optional) Rub the butter into the flour; add sugar, baking soda, baking powder, salt. Make a well in the center of the mixture. Add buttermilk, stir until lightly but thoroughly blended. Use only enough buttermilk to make a stiff dough. Add raisins or caraway seeds. Grease and flour a heavy baking pan. Pat dough to an 8-inch circle with floured knife. Make a large cross on top of loaf to prevent cracking. Spread melted butter on top of loaf. Bake in preheated 375 degree oven for 40-50 minutes or until golden brown and loaf sounds hollow when tapped. Serve hot with butter and honey. |
