PORK, PEPPERS AND POTATOES | |
A family favorite! 3 or 4 boneless pork chops, cubed 3 medium or 2 large potatoes 1 1/2 bell peppers cleaned and cut into small pieces your choice of noodles (I like Dutch Egg Noodles) 2 tbsp. butter, divided salt, pepper and garlic powder, to taste 1 can cream of mushroom soup 1 1/2 cups shredded cheese Preheat oven to 350°F. Cube pork while still frozen. Peel half potatoes, leave skin on other half and boil all of them as if to mash. Clean and prepare peppers into bite size pieces. Prepare noodles as directed on package. Fry pork in 1 tablespoon butter, adding salt, pepper and garlic powder as desired. Once potatoes are almost cooked through, remove from heat and drain. Drain noodles and add remaining tablespoon of butter. In separate dish, combine cooked pork with chopped peppers, mushroom soup, cooked noodles and potatoes. Add salt, pepper and garlic powder as desired. Mix well. Once all ingredients have been added, place mixture into casserole dish.
