YELLOW RICE AND CHICKEN 
1 fryer chicken
1/2 pt. olive oil
1 onion
2 cloves garlic
6 oz. tomatoes
1 1/2 quarts water
1 bay leaf
2 tbsp. salt
1 lb. rice
Pinch saffron
1 chopped green pepper

Cut chicken in quarters. Saute in oil with garlic and onions, chopped. Add tomatoes and water. Boil for 5 minutes. Add bay leaf, salt, rice, saffron and pepper. Stir well. Place in 350 degree oven for 20 minutes or cook on top of range, stirring occasionally. If desired, a box of frozen peas could be added during the last 10 minutes of cooking.
