CHICKEN MOZZARELLA 
4 chicken breasts, skinned & boned
1 egg, beaten
1/2 c. Mozzarella cheese, shredded
1/2 c. Italian bread crumbs
1 c. Ragu or your favorite spaghetti sauce

SAUCE:

1 tbsp. butter
1 tbsp. flour
1/8 tsp. salt & pepper
1/2 c. Mozzarella cheese
1/2 c. chicken broth
1/2 c. milk

Dip chicken into egg and coat with crumbs. Add enough oil or cooking spray to large skillet, cook chicken over medium heat until brown on all sides. Cover with spaghetti sauce and cook for 30 minutes.

PREPARE SAUCE: Heat butter until melted. Blend in flour, salt and pepper. Stir in broth and milk. Heat to a boil, stirring constantly. When sauce is thick, add 1/2 cup of cheese. Stir until mixed. Place cooked chicken in baking pan, cover with sauce and sprinkle with remaining sauce. Broil for 5 minutes until cheese is golden.
