CHICKEN MOZZARELLA 
12 oz. boned, skinned chicken breasts
1/2 tsp. mixed Italian herbs or to taste
1/2 c. sliced green onion
2 c. sliced fresh mushrooms
2 c. tomato sauce
2 tbsp. plus 2 tsp. wine
4 oz. Mozzarella cheese, sliced

Season chicken with herbs, salt, and pepper. Preheat non-stick pan. Brown chicken lightly on both sides. Stir in onion and mushrooms. Add tomato sauce. Cover; simmer over low heat until chicken is done, about 10 minutes. Stir in wine. Divide evenly into 4 individual baking dishes. Place 1 ounce of chicken on top of each portion. Bake in a hot 450 degree oven 5 minutes or until cheese is melted.
