MOZZARELLA CHICKEN 
4 boneless chicken breasts
1 med. onion, sliced in rings
1 med. bell pepper, cut in thin strips
1 tbsp. olive oil
4 Mozzarella cheese slices

MARINADE:

1/4 c. water
1/4 c. red cooking wine
1/4 c. soy sauce

Combine marinade ingredients. Marinade chicken for at least 30 minutes in refrigerator, stirring halfway through to insure total coverage.

Heat olive oil in skillet. Brown chicken pieces, about 5 minutes on each side. Reduce heat. Cover chicken with onion and peppers and most of marinade. Simmer until done on medium-low, about 25 minutes.

Remove to oven-safe serving dish, onions and peppers on top of each chicken piece. Place chicken on top of each breast, and put under broiler until cheese melts.
