ROLLED CHICKEN IN WINE SAUCE 
2 lb. thin chicken cutlets
Seasoned bread crumbs
1 egg
1 c. milk
8 oz. grated Mozzarella cheese
1 c. white wine
1/4 lb. butter
1 tbsp. lemon juice

Mix egg and milk. Dip chicken into mixture, then coat with bread crumbs. Sprinkle grated Mozzarella cheese on breaded cutlets. Roll cutlets and place on disposable pan.

Heat wine, butter and lemon juice until butter is melted. Pour over chicken cutlets. Bake in heated oven at 350 degrees for 45 minutes to 1 hour. Serves 4 to 6 people.

Loved this one. I needed a recipe for which I had ingredients on hand, and basically, I only had 2 lbs. of chicken cutlets. Fortunately, I had the other stuff--it really doesn't require too many ingredients--, so I gave it a try. Everybody loved it, it was super easy to make and I only had one pot to clean! We put this one in our recipe book immediately.
