BAKED SQUASH 
2 lb. yellow squash
1/4 lb. grated cheese (Cheddar)
Butter
Pepper
1 tsp. salt
1 med. onion
2 eggs
Ritz cracker (crushed)

Cook squash in salted water until tender enough to mash. Cook chopped onion in butter until soft. Mash squash; add onion, cheese, eggs and pepper. Add enough cracker crumbs to make mixture stiff. Cook in 300 degree oven until set.
