THE BLACK - EYED PEA'S BAKED
SQUASH
 
5 lbs. med. yellow squash
2 eggs
1 c. bread crumbs (use whole wheat bread)
4 oz. butter
1/4 c. sugar
2 tsp. salt
2 tbsp. chopped onion
Dash of pepper

Cut off tips of squash. Cut squash into 3 to 4 pieces. Place in pot and add water to just cover squash. Cook until tender. Drain in colander and mash. Add eggs, bread crumbs, butter, sugar, salt, onion, and pepper. Cover with a light layer of bread crumbs. Bake at 350 degrees until lightly browned. Makes 10 servings.
