BIG BATCH OATMEAL COOKIES 
2 c. shortening
2 c. brown sugar
2 c. sugar
4 eggs, well beaten
2 tsp. vanilla
3 c. sifted flour
1 1/2 tsp. salt
2 tsp. baking soda
6 c. oats
1 c. pecans or walnuts, chopped

Cream shortening and sugars; add eggs and vanilla. Beat well. Sift dry ingredients. Add to creamed mixture. Add oats, nuts; mix well.

Shape into rolls; chill well. Slice 1/4-inch thick. Bake on ungreased cookie sheets at 350 degrees for 10 minutes. Makes big batch.
