BIG-BATCH MEATBALLS | |
4 eggs 1 c. beef broth or water 1 c. fine dry bread crumbs 2 tbsp. instant minced onion 2 tsp. salt 1 tsp. pepper 4 lbs. lean ground beef 2 tbsp. soy sauce Whisk eggs in large bowl; add beef broth, bread crumbs, onion, salt and pepper. Let mixture stand 10 minutes to allow bread crumbs to absorb broth. Add beef and mix until very well blended. Scoop up mixture with small ice-cream scoop (3 tablespoon capacity) or using a scant 1/4 cup of mixture for each, shape into 48 balls. Place close together on rack in roasting pan. Brush tops with soy sauce. Bake in preheated 375 degree oven 12 minutes or until done. Cool; refrigerate or freeze portions of 12 meatballs each. |
