BAKED PARMESAN CHICKEN 
2 1/2 to 3 lbs. chicken, skin removed
1 1/2 c. seasoned bread crumbs
1/2 to 3/4 c. grated Parmesan cheese
1 clove garlic, chopped fine or 1 tsp. extract
1/2 c. melted butter

If you use unseasoned bread crumbs, add about 1 teaspoon salt.

Mix the crumbs (Italian seasoned bread crumbs, especially good), the Parmesan, and garlic. Dip each piece of chicken in the melted butter and then in the crumb mixture.

Arrange in a shallow baking pan. Cover and bake about 1 hour at 350 degrees, uncover and bake another 1/2 hour. Baste often with melted butter or pan drippings.

OPTIONAL: Rather than dipping chicken in butter, can be dipped in milk-egg mixture before coating with the crumbs. Then place in pan, drizzle lightly with melted butter and bake as instructed.
