SPINACH MOLD 
1 pack spinach
1/2 c. dry bread crumbs
1 onion
2 c. white sauce (see below)
2 tbsp. butter
2 eggs
Use mold

Cook spinach, mash fine. Brown onion in butter. Add to spinach. Beat egg yolks into white sauce (recipe below) adding butter and crumbs. Combine the 2 to the 2 mixtures. Cool. Add the beaten egg whites. Place in well greased ring mold. Cover and set into frying pan which has been heated with hot water. Bake 25 minutes in hot oven at 400 degrees. Unmold onto plate. Fill center of ring with buttered asparagus tips, garnish with strips of pimento and slices of stuffed olive.

WHITE SAUCE:

1/4 c. butter
3 tbsp. olive oil
2 cloves, crushed garlic
1/2 tsp. salt
1/2 tsp. oregano
Dash of basil
1/2 c. parsley, chopped
Grated Parmesan or Romano cheese

Melt butter. Add oil, garlic, salt, oregano and basil. When very hot add 1/2 cup parsley, chopped or grated cheese. Use sauce for many other dishes but use this in spinach mold.
